The producer, Jamie Cantillo, owns four different farms within the municipality of Garzon, Huila and this lot is created from a culmination from these four farms. It was wet processed right on one of Jamie’s farms, then dried on raised beds under shade. Once dried to 10-10.8% moisture content, it was sent to a dry mill in Medellin, Antioquia and then to Descafecol in Manizales, Caldas for decaffeination. In this process if decaffination, the coffee is soaked in a solution of fermented sugarcane, which bonds with the caffeine compounds and is rinsed out, preserving the coffee’s unique flavor, while extracting the caffeine.
